Black Eyed Peas

Ingredients

  • 1 lb dry black eyed peas
  • 1 smoked ham hock
  • 1 large bunch mustard greens or collards roughly chopped, tough part of stems removed
  • 1 onion diced
  • 1 c. chopped celery
  • 3 garlic cloves minced
  • 3 bay leaves
  • red pepper flakes to taste
  • salt to taste
  • 2-3 tbs oil

Soak peas overnight, drain and rinse. Or, soak for 1 hour in boiling water to cover, drain and rinse. In large soup pot bloom red pepper flakes in oil until fragrant, about a minute. Saute onion, garlic, and celery until translucent. Add ham hock, bay leaves and peas and cover with water. Bring to a boil, lower heat and simmer for about 1-1.5 hours, until beans are soft and meat is falling away from the bone. Add water as necessary during cooking. Once peas are soft, add greens and cook until wilted and tender, about 10 minutes. Salt to taste. Enjoy a new year of good luck!
